Chicken Enchiladas Recipe

I am always on the lookout for quick and easy meals that are still good for us. The other day I was staring at some leftover chicken and wondering what to make.

Chicken Enchiladas sounded perfect.

Ingredients:

* 1 cup cooked chicken, cubed
* 1/2 can cream of chicken soup
* 1/2 cup salsa
* 6 tortillas
* 1 1/2 cups shredded cheddar cheese
* 1 tomato
* chili powder to taste

Instructions
:

* mix chicken, cream of chicken soup, salsa, 1 cup of shredded cheese and chili powder in a bowl.

* spoon mixture into tortillas and wrap.

* place into a baking dish with seam side down.

* top with remaining cheese and fresh diced tomato.

* bake at 350 for 20 minutes.

Quick, easy and oh so good!
