Spinach Stuffed Chicken Parmesan Recipe

In keeping with my goal to lose some weight and be healthier, I have been trying to come up with new recipes that are not only healthy but also tasty. This one fits the bill perfectly.

I will say that my husband feels that if God wanted us to eat vegetables and meat mixed together He would have created animals with plants growing off of them. So this was a perfect meal to make when he was not here for dinner.

The ingredients:

2 boneless skinless chicken breast
1 cup fresh spinach
1/4 cup shredded light mozzarella cheese
2 eggs
1/2 cup whole wheat bread crumbs
marinara sauce
low fat provolone cheese

Start by slicing the chicken breast length wise to get 3 thin pieces. Season with salt and pepper.

Combine spinach and mozzarella cheese in a bowl.

Lay some of the spinach and cheese mixture on a piece of chicken. Roll up in a tight roll. Dip in egg wash, then coat with bread crumbs.

Place chicken, seam side down, in a lightly oiled or foiled lined baking dish.

Cover the dish in foil and bake in a preheated 450 oven for 20 minutes. Remove the foil and top with marinara sauce and some provolone cheese on each piece of chicken. Bake uncovered for another 5 minutes.

I served this with a fresh garden salad and some fried eggplant. Both kids loved it and I thought the chicken was perfect!
