I learned recently that Just BARE Chicken is holding a recipe contest. The idea is simple, use BARE Chicken plus 5 ingredients to come up with a recipe of your own.

Salt, pepper and water are considered free ingredients and don’t count towards your 5 in the recipe.
For my recipe, I would submit my Chicken Picatta.
2 Just BARE Chicken boneless skinless chicken breasts
Salt and Pepper
2 whole lemons
1/4 cup brined capers
1 cup chicken stock or white wine
1 stick butter
1/4 cup olive oil.
Start by slicing the chicken breast in half lengthwise.
Salt and Pepper each side.
Add olive oil and half the butter to a pan and cook the chicken until done.
Transfer the chicken to a plate.
Add chicken stock or wine to your pan. Mix well to get all the goodies left behind from cooking your chicken. Add capers and the rest of the butter. Mix until the butter is melted.
Cut you lemons in half and squeeze the juice into the pan.
Taste as the lemon juice can be very overpowering at times. Add more stock or wine as needed.
Add the chicken back to the pan until warm.
Serve the chicken and the sauce over pasta.
