Shrimp Po’Boy with Homemade Spicy Remoulade Recipe

I got a little creative the other night in the kitchen and it was a hit. I admit it was carb city but oh, it was so very, very good.

What you need:

1 loaf of French bread or rolls
Popcorn shrimp
Homemade Spicy Remoulade (recipe below)

First off I cut the bread into half length wise and then cut into sandwich pieces. Toast the bread lightly.

Top with popcorn shrimp, shredded lettuce, tomatoes and the remoulade. I served with fries and brussel sprouts. Quick, easy and did I mention it was oh so very good.

Spicy Remoulade Sauce Recipe:

3/4 cup mayonnaise
2 teaspoons Dijon mustard
1 1/2 teaspoons whole-grain mustard
1 teaspoon tarragon vinegar
1/4 teaspoon Tabasco sauce
2 teaspoons drained capers, chopped
1 tablespoon chopped fresh flat-leaf parsley
Salt and freshly ground black pepper, to taste

Combine all ingredients in a bowl and refrigerate until ready to use.
