Heart Healthy Spaghetti Recipe

Just before Christmas we had a major health scare in the Yellow Tennessee house. After a couple days of chest pain, my husband went to the doctor. We were shocked when we discovered he had an abnormal EKG. Unfortunately past that, they don’t tell you much but want to schedule other tests.

In the end it all worked out to be nothing major. But it was a scary few weeks around here.

As a result, we decided that we were not ready for him to die so we made some little changes to our diet. Lots of whole grains, leafy greens, lean meat. Basically think low fat, heart healthy meals.

Heart Healthy Rocking Spaghetti Recipe 

Heart Healthy Spaghetti


1 pound boneless beef round steak or flank steak

Olive oil

sliced fresh mushrooms

1 large chopped onion

1 whole chopped green bell pepper

1 stalk chopped celery

2 cloves garlic, minced

2 cans Italian diced tomatoes

1/2 teaspoon dried basil

1/4 teaspoon dried oregano

1/4 teaspoon crushed red pepper

8 ounces whole wheat spaghetti

Trim fat from meat and cut into 4 equal pieces. Add about 1 ounce olive oil to pan and cook each piece of meat until brown on both sides.

Add meat and all other ingredients besides spaghetti to an oven safe dish. Cook at 350 for an hour and a half. I cover my dish with foil.

When about done, cook spaghetti according to package directions.

Serve over whole wheat spaghetti noodles. I have made this a couple of times now and the second time I added a bunch of kale. We all loved it and the best part is that it is low fat.
