It’s been a long, busy week, and while Sundays represent your best chance of connecting with the family over dinner, you don’t want to spend most of the day in the kitchen. Sunday dinners don’t have to be an epic production. Here are five quick and easy, scrumptious meals you can prepare for the family without confining yourself to the stove for the entire day.
Tacos
Take the family to Mexico on the cheap with this easy dinner option that will have everyone asking for more. Grab some taco shells from the store and toast them in the oven for about five minutes. Fry up some mince (beef, chicken, lamb or pork will work fine), add some onion, green capsicum, garlic, chilli, water and salsa, and bring to boil. Fill taco shells and top with cheese, fresh tomatoes and lettuce.
Barbeque Chicken and Roasted Potatoes
This is an easy meal that will leave every member of the family licking their fingers and asking for more. Fire up the barbeque and throw on some well-seasoned pieces of chicken. After they’re done cooking, remove the pieces from the grill and brush with Bg’s BBQ Sauce that can be snagged from www.barbequesgalore.com.au. While the chicken is grilling, chop up some well-washed potatoes and coat with olive oil, salt and pepper. Toss it in the oven for 45 minutes for some nice, crispy roasted spuds.
Personalized Flat Bread Pizzas
This meal provides an opportunity for the whole family to get in on the act. With a pack of flat bread, a jar of pizza sauce, some shredded cheese and a half dozen or so toppings like salami, ham, chopped mushrooms, onion and capsicum, the whole family can build their pizza from scratch. Place the pizzas in the oven and about 15- 20 minutes later, you’ll be sitting down to your own pieces of culinary art.
Spaghetti Puttanesca
You can create an absolute miracle with a box of spaghetti, black olives, a can of tomatoes, onions, garlic and a can of anchovies. Prepare the spaghetti as directed on the package, heat olive oil in the pan, throw in your other ingredients, and bring to a boil. Then simply add your spaghetti to the sauce, toss it all together and top with Parmesan. Plate it up, serve with a little garlic bread and voila, you have a perfect meal for the family.
Kielbasa and Potatoes
You can have this classic combination of pork and potatoes in front of your hungry brood in about 30 minutes. Cut about a half kilo of kielbasa and potatoes into bite sized pieces. Then, in a good sized pan, fry the onion and garlic powder in oil until the onion is tender. Add kielbasa, potatoes and a can of corn, making sure the kielbasa is heated properly. Then season with salt and pepper to taste.
