Because of the health benefits alone I am adding more fish into our diet. But my husband is not the biggest fan. So that means I have been trying to come up with ways to ‘dress’ it up without compromising on the health benefits by deep frying it.
This Mediterranean Baked Talipia fits the bill perfectly.
A wonderful flavorful sauce gives the talipia a little extra something without taking away from the nutrients of the talipia. But my favorite part is how simple and easy it is to make.
Mediterranean Baked Talipia
You will need:
4 to 5 talipia filets
4 tomatoes, diced
About 3 ounces of capers
1/4 onion diced
1 clove of garlic diced
olive oil
salt and pepper
Salt and pepper the talipia and cook in the oven at 350 degrees for 15 to 20 minutes.
Add onion and garlic to a sauce pan with a little bit of olive oil. Cook over medium heat until translucent.
Add tomatoes and capers. Continue to cook until tomatoes just start to break down.
I served it over brown rice with roasted veggies. It ended up being delicious and covered up the fish taste just enough that my husband ate seconds. I call that a huge success.
I am planning on making it again soon and I think this time we will have it with whole wheat spaghetti noodles.
